Breck will know this much better than I do, so I will just hazard a guess at a pairing.
Just because of the smokiness, how about a Laphroig or a Cao Ila, 10 years or so? Served neat or on the rocks. A single malt from the Highlands might be OK, but the smokey cheddar might overpower it. I would think a blended Scotch would not stand up to this.
