Edit: I wouldn't use opened fountain syrup in any food product I was giving to anybody I liked.
Could be moldy or God knows what.

Bag In Box syrup is sealed, with a valve that doesn't allow flow unless/until the proper connector is fitted, not allowing contamination. Can't really just pour out anything.
Figals aren't used anymore, except in extreme circumstances.
Diet syrup is almost like water, whereas sugar based syrups are considerably thicker...The ratios are different based on the product, so, I'm not sure what he's trying to calibrate?
My last job was maintaining/installing co2 based soda dispensers, and related equipment.
There are both Coke and Pepsi facilities in Fife. You may be able to beg them for some stuff....but due to that L word (liability) I doubt they'd give you anything for free, if it's expired or anything.
