Marinate flank steak for 24 hours in a mixture of soy sauce, orange juice, lime juice, garlic, lemon juice, onion, jalapenos, cumin, chili powder, coriander and a couple of other things.
Grill. Slice thinly, then chop into bite-size pieces and make awesome steak salads for the whole damned week.
I'll admit, after looking at the photo it doesn't look like a prize-winner . . . but it is.

Looks a tad over done there Steve.. but then again i prefer a medium rare steak, personal preferences and all that
Which reminds me i need to go and buy another skirt steak so i can do this..

It was maybe . . . medium? I kept it on the grill until it was about 130 degrees at the center, then let it rest for a bit. It was still pink in the middle.

Oh it is, it is. You have to use lump hardwood charcol though, the regular compressed kingsford charcol stuff makes too much ash.

It is cold and rainy today so I wanted something that would stick to my ribs so I made some homemade sausage gravy and cheated with some of those pop the can biscuits to make some killer biscuits and gravy.
