What's your favorite cheeses and what do you use them for? For cheese to just eat as itself, my all-time favorite is Red Leicester. It's a great and flavorful cheese, similar to cheddar, but with a delightful nutty flavor. Not common, I snap it up whenever I see it. I've also been a big fan of goat cheese lately.

Oh my . . . what a thread. I really like the Tillamook extra sharp 24-month old cheddar. That's some GOOD stuff, and a reasonable price if you buy it at Costco. Unfortunately they seem to be phasing it out in favor of the 15-month variety, which is still good but decidedly inferior. And of course, other quality sharp cheddars are on my A list as well. I can hit a good gorgonzola pretty hard, too. Sometimes I'll eat it by itself, but I'd rather have it on crackers or something like that. And a quality parmesan . . . eek, I can break chunks of that shit off with my hands, and chow them down. Cheese. It's what's for dinner. And with your wine. And with your whiskey. And sometimes just as a snack.

I like a little gorgonzola in my cheese sauce for pasta, but it'll overpower everything else easily if you're not careful.
Parmesan cheese is God's Perfect Garnish, I'll add that shit to anything. Almost literally anything.

If I'm making a plate of nachos, I'm going with a simple pepper jack and Colby jack.
Nothing beats a good Brie on crackers either.

Gorgonzola, really sharp Cheddar, Swiss, and cream cheese. Like cream cheese on top of a pastry, onion bagel, or on white bread with strawberry jam.

Wow great thread.
For all around snacking a good extra sharp cheddar like Tillamook is great with crackers. On sandwiches swiss cheese is my all around favorite. On carne asada some melted queso fundido or queso fresco is the ticket.
If feeling a bit decadent, then the German Rougette soft cheese with a baguette is great along with some Bavarian hefeweizen. Brie like in consistency without the super strong Brie flavor. It's hard to find so Camembert is my next favorite.

On a salad: Feta On a bagel: cream cheese, a fried egg, bacon, and a slice of sharp cheddar....fucking amazing.
But I think my favorite cheese is asiago, smells like stinky feet but tastes like heaven.
Second favorite is a good sharp cheddar.

Costco has a smoked gouda I'm fond off.
Then there is this Armenian goat cheese they sell in most Russian stores. It's sold in refrigerated cans. Fucking amazing.
