 Infused fish sauce

Last night I thought about infused oils and vinegars, but why hasnt fish sauce been done.? Well today is the day for something new! I figured I'd start out on a lighter sauce and go from there. Right now I have some doing its thing with ginger and garlic because that's what I have here. Lemongrass and whole birds eye chilis will be next, then probably doing all four of the mentioned. Maybe some dried mushrooms would be good as well, that could be called umami bomb if it works out.

I am crazy. But it makes sense. My concern is shelf life since fish sauce oxidizes over time, might be best to keep these in the fridge.

Red Boat has a few flavored sauces.
There are also some imported Vietnamese fish sauces with other stuff suspended, but as I rule I don't buy fish sauce with big pieces of whatever in it.

Thought of doing sesame seeds. But those are oily and might not work good.

I'm really thinking dried herbs, tarragon, thyme, basil ect....

Any other ideas are more than welcomed

So back in the day I offered my Thai Chilli peppers in fish sauce.

Some variations would to add sesame oil, garlic and chives.

So after 12ish hours... it has some bite from the garlic and ginger. Too strong so I'll thin it out.
