Me?...Well, I marinated some bone in Chicken Thighs for 4 days and then baked them at 375 for the Wife's Lunches.
Pretty basic, crappy pic after I pulled them from the Oven but she said they were really good. (You can click on the pic to enlarge twice)

Damn.... I've still NEVER used my broiler pan for anything..... Yuuuse cast iron.

(see my post in the other thread) I was baking, not broiling. That pan was just handy, I have lots of Cast Iron options if needed. It just wasn't necessary for baking some Thighs. Chicken is easy, it's not hard to get some good glaze and Crispy skin if you do it right.

Thursday I found a couple cube steaks at the bottom of the freezer from the side of beef we bought last year.
I Italo spiced and breaded and air fried them. Absolutely tender and scrumptious.
Last night homemade pizza. Was good but tried "regular bake" (not convection) on stone in oven at 500°F Mistake. It baked up ok, finished fine but the crust hardly browned. Our oven works way better on convection mode.

Nice.... I think...?...? I pulled a meatloaf out of the freezer on thursday to thaw for today - gonna smoke it out on the grill since it is 'warm' and dry!

We had two big baskets full of spinach and basil. I love how my wife gripes about too much oil so I put extra olive and avocado oil in. First time with the chia seeds, I used like a couple teaspoons max.
