Sous vide overnight 150 degrees, now in the smoker to finish off. Pork ribs, and a brisket. More pix to come after smoking.

For the base I start with Mae Ploy curry paste, coconut milk, shredded coconut, corn starch, then add thai peppers. Usually have to wipe my head with a towel after a few bites.

If not, I'll do so, because you end up with a slab of bacon which you slice when you want some, and just sit in a pan on low until it's as you want it. It's better than nearly all store-bought bacon and it doesn't weep that weird white stuff.
