I love this griddle for something I had no idea: Just how FAST it cooks. That chicken was done perfectly juicy really quickly. The collards wet fried tender then that sections OFF, lid on and steamed with a little more broth. (normally you boil the shit out of collards).

Near 5 pounds of rough ground Mex taco meat (tastes like steak). Season overnight. On the flat top with onions to the right. The smell alone may put you in a coma.

Did marinated bone in chicken last night.
CHALLENGING.
Came out very tasty though. I will post some pics later, plenty of legs left over.
Skin did not crisp up. Problem was the marinade was a bit sweet, so when it hit the grill, gummed up really fast, but I soldiered on, with the press and covering lid and different heat zones the meat came out done perfectly, juicy and tasty.

Pretty hard to dry the skin at that point. One possible way would be a dry heat, with air circulation. 2) The covering lid, while helping to cook the chicken, also creates a steamy atmosphere, which doesn’t allow for any evaporation, and complicates things further with marinating.

Makes total sense. Good thing I am not a skin nut.
Next time full halves, splayed or spatchcock. Oil and dry spices only.
I like the griddle for juiciness and quickness for sure.
