And you used them at some point, right? I said I was making asada, I'm pretty sure. I like adobo but you came in like a freight train and essentially said make this (adobo) it tastes better. To me that's a matter of taste and who your guests are. I've no idea why Goya calls their all purpose varied mixes "Adobo". I just use them LIGHTLY as salt with a little oil and tequila as phase one tenderizing marinade. They make 4 or 5 flavors. Next will be oregano, orange, Brag aminos, TJ umami blend, lime, cilantro, etc..........(tonight). Then griddle tomorrow

Most all "Mexican" recipes vary a LOT. Because they are regional and home based I think. There are more variations of adobo than asada I suspect, including Filipino adobo - but that's another post/thread.
Asada recipes are about meat umami not about a huge flavor PUNCH. Hence some of my comments above. I will chop the meat by hand roughly for guest to throw in to fresh tortillas. With all kinds of fillings as well.
Marinades are up to the chef, many have soy sauce or sweet soy sauce. I don't want the sweet. Most all have citrus (adding lime mid day), cilantro (will add soon), some have herbs, I used some oregano and just a tiny amount of thyme. Some have some chilis som chili powder and or even smoked paprika. I specifically AVOID cumin. I love cumin but I find it hides the umami meat flavor. Sure it adds that Mexican touch, but not in asada. Some have vinegar (I have never used vinegar). Some even have beer. I have used beer, but nothing spectacular IMHO. Google it around.
This evening I will drain the meat, pat dry and on the hot seasoned, oiled griddle. I don't want the boiling steaming effect for sure. This thanks to @NWGunner

Cooked. Easy. The most browned were definitely the most tasty. I could have gone longer on the grill with some of them.
So all in all a tasty way to deal with a very tough cut of beef.
