Habaneros? HABANEROS!

I have never gotten anywhere near the production of habaneros that I got this year. Made a new garden section up against a south facing wall of my garage, and whoo boy, that plant went wild! I had already picked over 2 doz before today and figured this is probably the last of the warm weather for the year, so time to pluck the rest. I eat them regularly but could use some suggestions on what to do with them to preserve them for later.

This is exactly 100 peppers, from one plant!

You can dry them or freeze them.

I like freezing because when you take them out, you let them partially thaw and then they are easier to chop/mince.

Smoke 'em, dehydrate 'em, grind 'em

...then sprinkle on pretty much everything.

Pickle them in Fish Sauce!

Cut them up in slivers and cover them in your fish sauce of choice. I also have added garlic and/or chives.

Thanks for the suggestions. We actually do have a nice dehydrator, I might experimemt with that. Wife wants to pickle some, not sure I'm adventurous enough to try it in fish sauce. The wife makes kimchi and we have fish sauce for that, so maybe..... Hmmm, maybe even smoke some and then dehydrate!

I suggested dehydration, but then my mind when back to when I dehydrated plums recently. The garage smelled HEAVENLY.

I'm sort of wondering what the air would be like when dehydrating habaneros....

I dehydrate mine in the sun.
I then put them in a jar with honey.
After a bit you get some good honey habanero bbq sauce.
You have to get the moisture out of them so the honey won’t ferment.

LOL, I have been watching old episodes of Little House On The Prairie with my kids lately, so in my head I heard you say that first part in Nellie Olson's voice, and stick your tongue out afterwards! :045:
Not likely to be sun-drying anything in western Wa in October, except maybe in Sequim.... :wink05:

Yep, dehydrate them and grind them.

Makes good for pork rub.

I put a greenhouse in my garage with a heater and grow lights so I could grow hot peppers...any tips would be very much welcomed
I grew 4 jalapeno plants in 5 gallon buckets and they are in the greenhouse now....the peppers are mostly duds with a few very hot ones
I am wanting to start some habaneros for my wife along with thai chilies and 5 color peppers....your input would help...very nice looking peppers
