 Instapot Pho suggestions.

Wife and I are on a Pho kick. Started out making Ramen at home then Pho, and turned into bastardized Ramen/Pho (dont murder me) combo. But either broth takes a huge amount of time. So, I've got an Ninja Instapot and was hoping someone has a good recipe for Instapot Pho broth.

Yeah, that sounds good. I am in a room for rent and some bimbo who had the bedroom next to the kitchen blew out the kitchen appliances, so I'm cooking out of the toaster and hot pot right now. Any interesting ideas above normal ramen is good.

From my limited experience with Pho.
There are tons of differences in what it should taste like. I have had basically flavored water to some good honest Pho from many different restaurants. So find one that works for you.

My favorite "local" place is Than Brothers in Everett. Pretty sure they haven't seen the bottom of the giant broth pot since the first service. The broth has tons of depth and killer flavor.

I think the wife uses more bones, but similar to video. She calls it bone broth, but I know it's not that exactly. Also she did say that first par cook and rinse step is very important.

They have good cream-puffs and - adequate - pho.

One secret to good pho is the time taken to scrape the scum off, and make clear broth. Not sure that can be achieved with an insta-pot.

You probably know this, but I thought I’d mention that the broth cooked in an Instant Pot isn’t going to be as clear as you’re used to.

Part of the clean flavor of the broth comes from the fact that it doesn’t reach a boil when cooking. The pressure in the Instant Pot will do that. But, it will still be good.

I haven’t used this one yet, but it has some good technical guidance.

If it ends up being too much work, perhaps your favorite place might sell you some quarts of broth to freeze, then you could just reheat & add your own stuff :thumbsup2:

Than is awesome. One of the places I miss living out in Spokane.

We make our own beef bone broth in a stock pot. But it definitely comes to a boil, and has a strong flavor. So maybe we need to simmer.

This one, they use bones, not just meat like the previous one I posted. This is beef, too, but there’s also a link in the body of the text for a 20 minute Chicken Pho.

Thank you all for the interest. I've watched multiple videos (Quang Tran YouTube gave me the idea). One guy has an instapot pho recepie but I figure I'd ask the masses.

I've got a general recipe that I use. Tonight was:

1.5tbs coriander seed toasted to fragrance
10 star anise toasted to fragrance
2 cinnamon sticks toasted to fragrance

2 large bulbs of ginger toasted
3 medium sweet onions toasted

2lbs oxtail again browned
2.5lbs bottom round browned as well

Everything was not boiled. I will do that if I don't brown the meat. It does create slightly cloudier broth.

4tbs demera cane sugar (sub for rock sugar)
1tbs salt
4tbs fish sauce

Fill the Ninja Foodi to the absolute brim. Pressure cook for 1.5hrs. Let pressure naturally release. Add salt and fish sauce to taste.

This is my usual I was hoping to get a better beefier richer broth. Ill dig through my cookbook and see if I can find my Ramen via instapot stuff.

Slight update.

Good flavor of spice and ginger, actually very clear broth. Beef flavor is seriously lacking.

Damn, I want that good beef flavor. I'm worried about dumping beef into it and not getting any return. I have tried bullion, not very impressed with it.
