There are tons of differences in what it should taste like. I have had basically flavored water to some good honest Pho from many different restaurants. So find one that works for you.

My favorite "local" place is Than Brothers in Everett. Pretty sure they haven't seen the bottom of the giant broth pot since the first service. The broth has tons of depth and killer flavor.

I got an XL with extra noodles and meat. ONCE. Just had come down from a camping trip on the side of Rainier in wintertime, and was a bit...hungry. I think I've been that hungry maybe twice since (2010 or so).

Maybe this belongs in the unpopular opinion thread:

Than brothers is to pho, what McDonalds is to burgers. Though, I guess if you can stomach keystone, you'll eat anything. :peep:

I bought some beef broth mix from Uwajimaya. Not the best I've ever had BUT better than most PHO joints I've had.
