I am mostly asking for when you make fried fish at home. Which do you prefer? If you don't fry fish at home but enjoy it when eating out please vote and tell us below.
When I mean flour I mean flour-egg wash- flour.

Partial to beer batter. Love me some beer battered cod fish n chips though sheez I really miss halibut fish n chips. Y'all have the best seafood in the country there. Gulf Coast salt water fishing is hard to beat but the seafood ain't the same when it comes to eating time.

I love a good beer battered fish, but damn its hard to find nowadays.... Main Street Ale House (in Bothell) used to have some of the best around when they were making it up fresh in the old days, but then they switched to frozen out of the box and then to panko.
There is nothing wrong with a good panko or tempura either - both will beat a bad beer batter. And a good seasoned flour works just fine on a fresh caught walleye, crappie or perch in an ice house any day..... damn - I miss those days....
I've NEVER understood how people can rave about Ivar's fish --- that cornmeal just doesn't cut it.

I prefer egg/milk wash dredged through saltine crackers that I've run through the blender to make fine crumbs. I've also used Dorito's or other spicy corn chips instead of crackers. No complaints so far.
My kid likes to do beer batter, so it's not uncommon to have dualing fryers going at our fish fries!! I drink my beer separately!

Beer battered halibut can't be beat for a batter option. We do fish tacos all the time and I do just a light flour and seasoning mix with a quick fry, and it is amazing. You get a little crispy action, but nothing that is heavy.
