If you wanna watch some good southern cooking. There’s a guy called Stalecracker, started on Ticktok, but you can see his videos on Facebook and YouTube.
Mostly makes giant meals more the masses. But looks damn good. Plus he’s entertaining as can be.

So, I've mostly kicked the problem I had when we started this thread - I can eat most things now, but have to avoid sugar. I'm okay with that and it's about that time in my life when genetics says I should anyway.
I came back because I've been watching Made With Lau - another Chinese chef that's retired, and living with his English-speaking son in California somewhere. The kid realized he can't cook anywhere near as well as his dad so before his dad passes on he decided to start the channel to document the recipes.... and got fairly popular. He's like the at-home version of Chef Wang Gang.

I love going to Chef'Store or Costco and buying the big subprimal cuts of beef, and then breaking them down for my own use. I haven't done enough of it to be good at it, but I've done a few and I've watched a number of YouTube videos showing the process. Today I found a series of four videos by Chef Mark Elia, a former butcher and former professor at the Culinary Institute of America. The intended audience of these videos are restaurant chefs, as there's a lot of focus on maximizing profit . . . but hey, for the home cook I think it comes down to the same thing, getting the most and best cuts from the meat that you buy. I found these videos to be much more useful than the others that I've seen. I found the tenderloin video above to be the most eye-opening . . . next time I do one, I'm gonna buy some meat glue! (Yes, it's on Amazon.)
