I have an Asian yellow plum tree in my backyard, and it's a mixed blessing -- fruit is sometimes good, but I struggle to find a use for the plums other than filling my face. Well, this year the tree was stingy, and what you see here is about half of what I got off of it: So what the hell, I put them into a jar with two cups of sugar and a cinnamon stick, and then filled it up with 190-proof Everclear. Well, I ran out of Everclear up near the top, so I topped it off with vodka. ^ That was August 15th . . . fast forward to today, after periodic shaking. Ewwww . . . yummy . . . I have mixed reactions to that. So tonight I crushed up all the plums to get all of the juice out (big mistake!), and started straining. I had bought some cheesecloth, so I got to experience that . . . omg. First I strained the big stuff out with a colander, than ran it through a finer strainer a couple of times, then finally got it all through the cheesecloth and lots of rinsing and fucking around. Here's what it looked like after straining out the big stuff: What you see above was never going to make it through the cheesecloth, so it went back to the fine strainer to remove the "plumsauce": And finally, after lots of straining "fun," I ended up with this: This stuff actually tastes pretty good, fruity and sweet. It's damned strong though, and you can feel the burn as it goes down. What you see in the glass there is 25% water, 75% liqueur. Taste-wise I'd like to use a little less water, but even at this concentration I can feel some burn in the throat. We'll see, I'll play around with the concentration and how to drink it. I've got about 2.5 liters of the concentrated stuff, so plenty to play with for a while!

That’s a fun experiment! Have you tried tempering it back with pear juice or apple juice?

You can buy ones that have a proof scale on them and you can use them in an end product, like that, but not as accurate as being able to take your initial gravity, final, and calculating your specific. You should get one though. Cheap tool to have laying around. Love plums. I'm sure that's killer. Got an apricot tree? I'd think that would be a tasty drink using your same method.

I've done similar with pineapple but other ingredients added, find that if it sits longer in a cool dark area it taste better as it ages. usually a yr got a hydrometer if you want to barrow. pretty cheap on amazon

Fun experiment! I recently tried something similar for the first time, but my Everclear 190 has 14 Carolina Reaper peppers in it. Will be dispensed with an eye dropper, LOL.

As far as Plums…I’ve heard mostly of Plum Wine, and Plum Jerkum, which is more cider-like.
