How'd the coconut go with it? I was scouting for coconut yesterday.....
Made it frankly. But here are a couple things.
Coconut cream barely tastes coconutty. A little, depends on brand, CoO, etc Your suggestion is good - next time shredded coconut in the nut mix (btw macadamias worked well) AND in the punkin mix use coconut flour rather than almond flour
Maybe powdered coconut or something else in the cake mix. Too much?

I was planning on putting the coconut in the pumpkin mix only just to add texture - hopefully enuff and/or big flakes that would give a hint of flavor.
I was actually really happy with the way my neighbor made the crumble without the nuts or anything else... I couldn't tell how brown she had gotten it, but it was just sooo tasty and crumbly. I'll be adding some pecans since I've got some in the freezer that need to be used up. Planning on picking up a box of Yellow Butter cake for this -- seems appropriate. Also planning on some fresh ginger in there too since I have lots too.
I like subbing some coconut oil in for the butter --- a whole cup of butter raises a flag for me for some reason....

Without nuts the cake layer should crisp up nicely. Then flip when cool and become the bottom crust. But me likes the nuts.
No guests right now. 9x13 is not a small cake thingy. This thing would kill us two. So I cut a nice big rectangle piece to fit in a sealed glass base freezer container for later.

So much better than a pumpkin pie tho --- isn't it? Yeah - best to pass some around rather than gorge yourself to death....
I'm torn --- I'm gathering everything I need to make one, but I also want to make a chocolate creamcheese cake too to finish off an opened can of frosting in the fridge first --- I've still got two pieces of apple pie to go before I can do that.... I feel the winter weight coming on quickly......

dulche leche is condensed milk with vanilla - so I'm told.
Did you mean "dulce de leche"? If so, that's sweetened milk that's caramelized. It may well have vanilla in, too. You can make it very easily from sweetened condensed milk by either simmering a still closed can gently for a long time, or by opening the can and baking the contents for a bit. You don't need to *simmer* the can - you can do it sous-vide, and the hotter the water the better the chance of an air bubble popping the can more violently. You can do it sous-vide instead if you don't like the idea.
If you make it with goat milk, then you end up with cajeta, which is also delicious, with a slightly different taste.

I've seen some tips to sub coconut mik for some or all of the evapped milk.... Not sure if that would mess with how it sets up tho.

It could. I would use liquid coconut CREAM, not the watery coconut milk. Depends on the milk is what I am saying.

Tom Douglas’s Triple Coconut Cream Pie has coconut layered throughout.
Below is the recipe, in case you want to get some coconut flavor into the crust of yours:
Picked up all the things for a pumpkin crumble.... still looking for some cheap(er) coconut.... I know it will be on sale coming up to Xmas. Thinking I'm gonna hold off making this until Xmas time. Planning to make a black bottom cake in the next day or two..... REALLY looking forward to it --- hoping it will work out! Gonna try it with a devils food cake mix. Mom would make black bottom cup cakes for us all the time - they were one of my favorites! I'm pretty sure it was the cream cheese filling. She would double down and put chocolate chips in the cream cheese too for a nice crunch/snap.
