Wife's outta town for the last week plus the one ahead. Threw a Sirloin roast on the Recteq mini. She had bought me a Cabelas slicer, grinder and vac sealer combo for some event. Finally got around to putting the slicer to work.

What's chiu chow style chilli oil? It's .. er.. a chilli oil I bought by mistake instead of chilli crisp one time, and decided to try it. It's spicier, less numbing, and all the stuff in it is soft, instead of crisp. Definitely recommend having some. I've never seen a YouTube chef with it, that I know of.
Chef Wang Gang showed me how to make the lamb less gamey, in this video.
Just in case you're wondering - no, I don't speak Cantonese - he's got subtitles.

Was planning on doing a no wrap cook but I got started late and the kettle struggled to stay up in the 275 range I wanted. Just wrapped at about 3 hrs, going to do another hr wrapped then do the last bit to glaze as we cook chicken skewers and Instant pot mac'n'chz.

I scored that off Craigslist last year for $80 If I remember correctly. I cooked hot and fast chicken on it while the ribs finished.

Final shot of the ribs before I pulled them off. Got busy and let them run 15 min longer than I wanted. Lots of pull back and some bones just fell out. Still came out really good. One of these days I will get started early enough to do the whole cook unwrapped.
Made up some sausage gravy this morning to go with some Hawaiian flaky biscuits I cooked last night (had to use up the can) and a couple of fried eggs... Damn - I keep forgetting how good that is!!!! Seems like kinda a waste for the Hawaiian biscuits.... but it was good. I'll use the the rest of them for some chicken sliders and make the more mundane Homestyle to go with the gravy.
Cooking some black beans right now to make up some chicken enchiladas for Cinco tonight....

I cooked up a set of the monster chicken legs I got last week.... SEVEN legs typically fill my rub/drying rack.....

I gave the two 'smallest' ones to my neighbor and dared him to eat them both.... He only ate one --- as did I. Amazing that ONE leg could be a satisfying meal! Easily 1/2#++ each! Most times I'll cook half a flat - seven legs - and eat the three smallest ones on the first round, and two for each leftover....
I've got two more sets of four of the same size!
