Fusion ham and bean soup
Lentil dal mixed with bbq pork rib meat
Sometimes fusion stuff is just odd. This one may be purpose made in the future! The Indian spices in the dal work really well with the bbq pork. Like ham-n-beans kicked up a couple notches. Somewhere a Hindu monk and kosher guy are going nuts.

Brisket, and sausages, over the last 2 days. 2 days ago I ground pork and fat, saving some to chop by hand, for a little texture, made and stuffed the sausage, and then let them air dry in the fridge so that they could go in the cold-smoke box on the side of the smoker while I cooked the brisket all day yesterday. I borrow the kitchen-aid grinder attachment from a friend. He also lets me borrow a LEM branded 5lb stuffer, which is the really important part. He has used and abused the grinder attachment, and it's showing signs of it. He's contemplating getting the metal one, and a new stuffer, which means I may have this creaky, squeaky one soon, which I might try to service to make better. My recipes are based on the Brian Polcyn recipes, but I add curing salt if I'm going to cold-smoke when he doesn't say to do so.
