For the base I start with Mae Ploy curry paste, coconut milk, shredded coconut, corn starch, then add thai peppers.
Usually have to wipe my head with a towel after a few bites.

I have returned from vacation. Pieces of meat cooked over campfires were reasonably regular, recently, except when I was in Orofino for Boomershoot.

No, I want to see. I need to try smoking brisket more, to practice it, and temps, times and techniques are a thing I need.

Heresy.

Did I post my bacon recipe? If not, I'll do so, because you end up with a slab of bacon which you slice when you want some, and just sit in a pan on low until it's as you want it. It's better than nearly all store-bought bacon and it doesn't weep that weird white stuff.
