Coming back to the keto thing from a few pages ago, if you like ramen, Kizuki are now doing both the carb-free yam noodles (shirataki) and noodles made entirely from kale which are also carb-free. They're both still cooked in the same water as the rest o the noddles, so not suitable for celiacs.

Trying to duplicate the recipe one of my employees from Viet Nam used to make for me.
Burns your ass!
BUT, actually settles my stomach. Used to have GERD and need some baking soda/water in the morning.
If I eat food with this in it, I don't even need the Prilosec.

Basically nachos on super steroids. The googled recipes are all over the map, some seem very odd to the way I learned in my mixed trash barrio where I grew up. I can cook this faster than typing it out

I only make the green. After a couple times, you might try/like the red. I don't use eggs in mine.

I only use either homemade chips or salt free chips. If you used the salted chips from the store, too much of a sodium bomb. They will work, but are just over salted for the dish.

I wing it completely so this is why I said check recipes on line. You want just enough sauce but the end product is not wet and chips still have good texture, not soggy

Dry ingredients: chips (measure to fit baking dish, glass or ceramic works best), good cheese, Mexican queso fresco or cotijo, and jack or pepper jack (last night I used two Spanish cheeses), cooked meat (I like mine really meaty - chicken is good but other meats work -smoked pork is great, BBQ beef), optional: drained dried cooked greens (I used a little cooked kale last night)

Sauce: oil, green peppers - I used fresh shishito peppers, can use other varieties mild or hot as desired, onion, garlic, creamed corn, green salsa, half-half (cream or milk), broth, a little cumin, red pepper flakes, little bit of oregano

Saute half an onion or so in enough oil, when cooking add, a little cumin, red pepper flakes, little bit of oregano, sliced peppers (ratio it to amount of chips), when peppers cooked add one clove of chopped garlic cook just a tad more, add 4-5 heaping tablespoons of creamed corn, nearly same amount of green salsa (canned or jarred is fine), it will start to thicken a bit, add a splash of broth and half-half to liquefy, but not super juicy - again judge by the amount of chips. You don't need all that much liquid.

Mix the stuff carefully (don't smash chips) to distribute the goodies, place in oiled baking dish, more mixed cheese on top. Bake at 375°F for enough time to get bubbling and browned a bit on top.

Serve with beans, avocado, salsa, lime

Would have bought marbled rye but the kids won't eat it and I didn't feel up to eating an entire loaf.

Bought everything from Costco.
The Coeur d'Alene French Baking Company sourdough is great grilled. REAL sourdough. Twangy.
Keep a tub of Pleasant Valley sauerkraut in the fridge, think it's actually larger than a gallon.
Kirkland butter, pastrami and corned beef are on sale this month at business Costco, made the dressing with Kirkland mayo................
Think the only thing not from Costco was the Beaver horseradish I used to make the dressing.
Think I'll go make another one.

Cilaques sound good. I'll have to try making some.

Also, a Reuben is one of my all-time favourite sandwiches, ranking up there with a good Cubano.

Last night I smoked the stuff that had been curing.

Duck is good, but a bit too salty. I'll have to use it in moderation in a salad with a good sour dressing.

Well, you do - if it's too salty, you can choose how long to sit it in water to let some of the salt come out in to solution.

Simple salad, with some of the duck breast. I scraped the thickness of the pastrami spices off the outside when I realized I had used cure and spice mix fr 4 instead of 2 duck breasts. Alas, it's the meat that's actually salty. The fat with spices on, no so much.
