And, damn, it is. This time I got the filling mostly hidden inside the cupcake, so it's done like a boss. Great idea!

It makes for a nice surprise when people aren't expecting a filling Red velvet with cream cheese frosting is one of my favs ---- only I hate what it does to my stools - makes you think something is really wrong with your intestines..... Something about the red coloring... just like if you have a big bowl of Fruit Loops ---- green poop is always concerning. I switched over to brownies to try and get away from the frostings and to make things easier..... if you make them with the 'cake like' option, they are damn good 'cake'. I've still got some plain jane brownie mixes in the pantry along with three boxes of the 'Delights Supreme Fudge' mixes - they have the fudge packet that you drizzle into the batter like the cream cheese and it leaves nice swirls of fudge in the brownies. Still have one more box of the Decadent German Chocolate cake mix --- same thing only with coconut/pecan 'frosting' drizzle to swirl in ----- that is DA BOMB! Much easier than frosting the cake. Thinking I'm gonna make the holiday pumpkin crumble tomorrow myself.....

I'm thinking its the red#40 that does it.... hard to get it out of the mix --- and if you did it wouldn't be 'red' velvet --- probably 'yellow' velvet.
Lets wait and see what Isildur has to say.... NO ONE has tasty cupcakes like that and only eats one a day..... usually its two to three.... I know.
How many black bottoms did he eat a day? They are like crack.....
Mmmmmm..... breakfast cupcakes..... The holidays are rogue times for food --- I'm expecting breakfast pumpkin crumble starting on Saturday..
Its only been a week since he made the black bottom cupcakes... and he made more - only different. Need I say more.....

Ha! Sequim is the retirement capitol of western WA, so I have old folks for neighbors all around me. Gave away most of both batches. I don't do Christmas cookies. No idea about the food coloring affecting anything, who looks at their crap floating in the bowl? I certainly don't!
