Yes, i did the Flat first. Actually, i an making burnt ends from the tip and the thin end of the Brisket. The thin end doesn't have the Fat all through it like the Tip, it's just an experiment.

They are in 1/2 pans with some Beef broth and BBQ sauce until about 210 degrees. Then i will cube them and then dip them in the renderings/broth from which i separated the fat. Then a light coat of sauce on top only and another 15 minutes to firm them.

...and then it will be BBQ Brisket Candy. :bigsmile:

I cooked over plum wood. First I smoke roasted some jalapenos and Anaheims from the micro garden. Then roasted some corn on the cob, then cut off the cob. Cooked some amaranth leaves (a bit like spinach). Some sliced heirloom tomatoes, with pesto over buffalo mozzarella and a ahi tuna steak slow smoke cooked on the outside with plum wood coals.

Damn. Gotta step up our game here. We just roast chile peppers over the burners on the gas range or in the broiler :bigsmile:

Try throwing some bacon in a cast iron frying pan, with some fresh raw whole peppers of your choice, then over wood smoke decently hot coals. You get chili pepper bacon and bacon flavored peppers! I use these to flavor other dishes.

Asparagus and salad. The salad is leaves with carrot, red bell pepper, crisped small pieces of my homemade bacon, a little of the leftover roast chicken from the night before, and a poached egg. The non-protein sections were dressed with a simple lemon vinaigrette.

I didn't get pictures but I made some tasty chicken fried steak and mashed taters the other night.....the recipe asked for hot sauce in the batter, I used Sriracha
