One caveat, though....Flay's stuff is great, but they often make transcription errors on the Food Network/Cooking Channel website when posting recipes.

If you can, watch the video first, if available. I've seen certain things omitted, like, no cumin in the cumin-crusted whatever, ingredients not listed that I just watched him prep, and errors like a 1/2 cup of salt, instead of a 1/2 Tablespoon icon_eek

Reading comments can help, too, especially if no video. Oftentimes, folks will point the errors out there.

I rarely "follow" a recipe so chances of overages are slim. I've been cooking for myself and others for 45+ years, so I would blame the wine if something stupid happened.

I actually detest Flay, but that's not saying he can't cook. Now if something new for me, I'm reading as close to authentic as possible.

I'm with you. I've not enjoyed the little of Flay's personality that I've seen, but his recipes are usually a reasonable start.

I do follow trusted recipes. It reminds me, though, I need to encourage my friend to decide to make sausage again. I need to make andouille, so that I can put them in my jamblaya. And I want some kind of ridiculously delicious smoked sausage, too. I also want Krakauerwurst. Everyone seems to translate it as kielbasa, over here, but it refers to several sausages, and never the one I want. I have found a recipe, but it involves an ingredient that my friend's wife is allergic to, so we'll be making that at my place...

Tonight, super simple

Rancho bacon black beans

"Spanish" rice - made with Thai jasmine brown rice

Green chile chicken slow cooked in the InstantPot

Rancho bacon black beans - 1 or 2 strips of bacon, tiny amount of onion, oil, couple three tablespoons of Herdez salsa ranchera (in small can), Mexican oregano, canned black beans completely rinsed, vege or chicken broth. Cook bacon, add oil, saute onion, add some of the salsa. Then rinsed beans and some broth, cook a little toss in more salsa and oregano to taste. Use broth and cooking to set consistency to liking

"Spanish" rice - made with Thai jasmine brown rice - rice, butter, small squeeze or anchovy paste, three small squeezes of tubed tomato paste, chopped small fresh red sweet pepper, sun dried tomato chopped, garlic powder, onion powder, paprika, one or two dollops of green salsa. Put rice and correct amount of water in rice cooker. Throw the rest of the stuff in. Go.

Green chile chicken slow cooked in the InstantPot. Boneless chicken thighs nice brown in good oil. In instantpot with whacked up onion, garlic, two or three jalapenos, good amount of favorite green salsa, and cumin. Slow cook. low 4 hours or so

Serve.

Looks tasty!!

I smoked two porterhouse steaks with pecan pellets. Amazing old timey flavor, but not overwhelming.

A few days back, but I've been distracted.

Pickle-juice brined chicken, then cooked sous-vide, so that I don't need to worry about it being cooked through. Then breaded and fried.

After a Brisket 101 class from a good friend of mine, this 12lb bad boy came out absolutely amazing....Delicious and tender...!!
