I went to a kimchi class tonight, so I'm making a place holder for kimchi. There are a ton of different types of kimchi. Just like sushi is a "style", so is kimchi. So for those that think kimchi is "gross" open your mind, and pallet to the all the varieties out there.
More to follow. Tomorrow I go shopping. Googeling kimchi does not help much.

We've just started making our own kimchi also. I'll talk to the wifely and see if we can post up a recipe for the thread. Super healthy stuff.

I'd be interested in a mild kimchi that doesn't seep out pores in your skin. Agree. Healthy stuff. I'd love to learn more.

Kimchee tip: Tear the cabbage into shreds instead of slicing it with a knife. Koreans believe that it makes the Kimchee more flavorful when it is not cut with a knife.
