The best canolli I have found this side of the Mississippi was in a little coffee shop in Perinville (just West of Lynnwood) called Mel and Mia's. Guy is from NY. Don't know what else he might do. There is Borracchini's in Seattle https://www.nowcake.com/I can't vouch for what they have. I have just heard about them. Good luck finding your bakery. Let us know what you do find. Really the closest way to answer that is to get some traditional Italian cookbooks. I have a few that are 100% dedicated to Italian baked goods. Of course it takes some practice and you are making home made stuff (better anyway!) - and as mentioned nothing like that around here. Italian flour is a bit different than typical flour here, but depending on what I am making I can make a match with King Arthur products - via blending. BTW I am Italian (yeah white guy with Spanish first name)

Jukk hit a couple I was going to suggest....
There's also La Rustica in West Seattle, good food & good desserts, including cannoli....
Marzano's, in Parkland, has good food and good cannoli's, but not sure if authentic.
Authentic may be hard to come by; authentic cannoli is made with ricotta cheese, and a number of even 'authentic', old school Italians, now add whipped cream, or something, to improve the texture.
A number of them even say authentic isn't necessarily better.
But, if it's what someone grew up on, and is used and expects, well then....
If you google best cannoli Tacoma, or something like that, you should find an article I think was in the Tacoma News Tibune a" few years back about it...
This isn't Baltimore or New York....the Italians didn't migrate here like they did there.....
