Instant pot can be your friend. I personally like cooking enough for leftovers. Using Hello Fresh/Blue Apron, I typically found I'd get 3 meals (or close to) out of a 2 person recipe.

When I was a young single dude, I'd use hamburger helper....don't do that. nasty stuff. cook fresh, or use frozen. often, frozen is better than what you can get fresh in the store.

We have some boxed meals like Hello Fresh at our local supermarket here, and I think Kroger may have just signed up to carry some Blue Apron type ones too.

I know you sous vide so that can help with meal prep with meats. One thing my wife and I were into when we first got married were 30 min meals by Rachel Ray. Good recipes that could be modified that were easy to do with most kitchen ingredients.
