I bought a welders blanket and put the butts on this morning. I just took the butts off for the wrap. There was ash on the meat and grates again.
Since I moved I've been banging around my bags of pellets. I am wondering if I created a little excess dust in the bag and pouring them in the hopper. I am going to clean out the hopper and either cook some bacon or drumsticks. See if the dust is still a problem.
This is a 3rd hand smoker that hasn't given me any troubles. Other than me running the hopper empty and having to restart midsmoke. Which makes me ponder even more that I have dust in the hopper that hasn't been cleared out since I haven't ran it empty in a long time.
If this doesn't fix it my wife might get pissed at the big ReqTec box and charge on the credit card.

Did you Vacuum out the lower area under the grates, drip pan, Auger and fire pot? That's where all the Ash buildup is. The Fan blows it around when it builds up and causes that.

Look at Camp Chef before buying the Rec Tec, I love mine with the side Sear Box. You can't go wrong with either one though.

If you have pellet dust in the hopper, it seems like that would come into the fire pot and burn up . . . it doesn't seem to me like that would translate to ash flying around the smoker.
I could be wrong, though.

Nothing else had changed other than outside temperature. Same 2 bags of pellets I've used in several smokes. I am using knottywoods pellets that I have been using for a while without issue. Maybe knottywoods doesn't like cold temps? I'll swap it out with a bag of Traeger pellets in my next smoke.

Wasn't planning to smoke today..... but...... My neighbor gave me a 12# turkey yesterday ~noon still pretty frozen.... I checked it this morning and damn if it wasn't thawed..... I was planning on cooking it this weekend or next week --- probably in the oven since the weather is supposed to turn - but since its so nice out there ---- SMOKE THAT BITCH!!!! I pulled the turkey out of the bag at 11am - minimal seasoning - just the cheap $ store memphis rub (no use wasting anything good at this point) - smoker going and bird on by 12:15..... Hoping its done before dark.

Spatchcocked turkey and a ham for thanksgiving. The sausage stuffing placed under the ham collecting the juice from the ham was pretty amazing and did not last long. Sent from my iPhone using Tapatalk

Smoked some turkey yesterday. Cut the back bone out of it. Then split it between the breasts. Seasoned one piece with Traeger chicken rub and the other with S&P, brown sugar and paprika. The home made rub won.
Brought it to 160 and took off to rest. It rose to 165 as it should. I found the breast meat a little firm. Not dry, not moist. It was a Jenny-O injected turkey.
It was a 12# turkey. I have a 20# one in the freezer. I bet that one will do better.
This was a great experiment.

Still have the ash problem. I did adjust the chimney cap down a bit. It didn't help.
The hopper was full of pellets. Now it's almost empty. Weather permitting I'm going to empty it out and clean it all again.
