We received several requests for the recipe and a suggestion to post it here, so here it is ...

The recipe uses S&B Golden Curry paste and is very versatile. You can adjust quantity and type of ingredients to suit any palate!

4 lbs pork or chicken or beef, cut to bite-size cubes
2 lbs medium-sized potatoes, quartered
2 lbs medium-sized carrots, cut into one-inch rounds
1 bulb garlic, minced
1 large onion, minced
2 stalks celery, thinly sliced
1 pack of S&B Golden Curry paste
6-8 cups light chicken stock
Peanut oil
Dry curry powder, soy sauce and white pepper for marinade

Marinade meat in dry curry powder, soy sauce and white pepper in fridge overnight. The meat should be coated with the marinade but not soaked in it. Eyeball ingredients according to preferred level of spiciness.

1. Heat up peanut oil in skillet, brown meat together with garlic and keep aside.

2. In a large saucepan or pot, saute onions and celery in peanut oil until veggies are soft.

3. Add in browned meat, potatoes and carrots, stir fry for 2-3 minutes. Pour in chicken stock, adding hot water until meat and veggies are covered. Bring to a boil, stirring occasionally.

4. Break curry paste into pieces and add to pot. Stir gently until dissolved.

5. Lower heat to a slow simmer until meat is tender and veggies are cooked. Keep stirring occasionally to prevent curry from sticking to bottom of pot.

Serve with hot rice. Enjoy!

Don't care what others call it, I'll keep on calling it GREAT.

Thanks for the recipe, Rita!

PointyShoes gave a gift to Dread Princess at the NY Shoot... Some delicious food for us to take home.

Let's discuss how a hypothetical man can be so stoopid. What if the Dread Princess' husband hypothetical man showed "too much" enjoyment of PointyShoe's hypothetical wonderful cook's fixings, and made a comment comparing them to Dread Princess' hypothetical man's wonderful cook of a wife's fixings of the same type.
Would that be stoopid? I think so. I recommend a "Do Not Do."

That, brethren and sistren, is STOOPID and don't do it.

Here's a better suggestion:
"Honey, wasn't that good? I think I'll get the recipe & try making it!"
Proceeds to totally mess up said recipe, and long suffering wife sighs and says "Forget it, I'll make it."

Very kind of Lady Rita to share...

Sometimes, when you are good at making a dish, and it becomes something you're known for, you don't necessarily want to give the recipe away :wink05:

But I am sure, over time, she has developed certain techniques & knowledge that can't be conveyed in a recipe :thumbsup2:

Point being, hers will probably always taste better

I suspect you're right, which is why she's still on the hook to bring it for New Years! :thumbsup2:
