 Winter time BBQ

Wifey wanted a nice Ribeye and some Brisket, so the Pop up came out of the garage with the Smoker. Time for some Reverse seared Beef goodness!

Two nice, thick Costco Ribeyes are on the smoke until about 110 degree's internal and then a quick sear at 900 degree's on the Sear Box.
Mmmmmm...Carmalized crust on Beef.

I have a full Packer Brisket that i will separate the Tip from the Flat to go on about Midnight for an early Dinner tomorrow. The Tip will be made into Burnt ends, literally the best part of a Brisket.

Anybody else not let Winter end your BBQ enjoyment? Post it up. :thumbsup2:

I bought a huge tri tip from Stewart's last week, ended up cutting it into 3 useable sized chunks. Threw one on the smoker for 2 hours, topped it with a carmalized onion balsamic "relish" and some non non paleo magic mushroom seasoning. Slayed it. Monday its sam the cooking guys mc rib sandwich. I'm excite, it's a rack of ribs deboned after cooking on a loaf french bread, I think I'll do a dr pepper onion bbq sauce for it.
