Interesting note on the barrel aging schoolboy. I guess even at 62.5% or 125 proof the bourbon is still 37.5% water. Maybe the oak barrels tend to absorb and retain the water content at a higher percentage than the alcohol resulting in a higher alcohol percentage at the end of the aging process? Interesting stuff!
