F-250 7.3 L diesel SES light AGAIN!

I know there's some Ford 7.3 liter diesel guys on here. My truck has started showing a "Service Engine Soon" light occasionally, and when it does, the truck won't move. I can push on the accelerator all I want, nothing happens. Once the light goes out (it's seemingly very intermittent), the truck will go again shortly thereafter. I just had to restart my truck 3x to get into a parking spot during lunch. Needless to say, this is not a very fun way to drive. Once the truck's moving, unless I come completely off the accelerator, it'll keep moving (or at least that seems to be it's behavior).
It's got an EDGE chip in it, and I've experiences similar problems when it was very cold outside (think leaving the NY Shoot after the truck's been in near freezing temps for hours). I unplugged the EDGE module a couple of months ago, cleaned terminals and plugged it back in, but it hasn't been cold enough to test if it's "fixed".
Any ideas?

EDIT: I checked the transmission fluid, and it's nice & pink and right on the dot on the dipstick where it should be. It continues to go through the Service Engine Soon light, throttle won't work for several seconds, then it will go... for a while. It rarely cuts out while the engine RPM is above 1000, but that's not hard and fast. This afternoon, it added bucking in 3rd(?) gear (it's an automatic), so as I accelerate, once it shifts into 3rd(?), it starts hesitating heavily. It did get me home, but not very willingly. I have not been able to pull any codes, my code reader says there are none, but I'm not sure I believe it, I no longer have a car young enough to see if it works somewhere else. I've talked to a couple of neighbors looking for another one, but no luck yet. I can drive Rita's ancient Mercedes into work tomorrow, and try to schedule to get it in to my mechanic.

Does this have a FIPL? (Ford diesel truck's equivalent to a TPS.) All of that including the engine light, sounds like the FIPL is bad or at least badly out of adjustment.

I think it has the 4R100 from what I can find on the interwebz. They are 'basically' the same transmission as the E4OD, some internal parts were changed
Routine maintenance all done?
When was the last time you changed the fuel or air filter?

When was the last time you changed the fuel or air filter? I don't drive the truck very much, but it's had routine maintenance. I just cleaned the air clear (AFE aftermarket ) which was filthy. I also just ordered a cleaning kit for it. I replaced the fuel filter some time ago (but not so many miles ago)

Diesels don't like to sit idle
I go by hours for my Peterbilt in stead of miles for maintenance
Even then I change things more frequently because it mostly sits
