55gr M193 with a 1/8 twist barrel whenever I can. The perfect middle-ground. House gun is a 13.7 using 55gr critical defense. Otherwise, twist don't matter to me. I don't have a single firearm that I am capable of extracting maximum accuracy from. Indoor range doesn't want steel core. But at last count, I have three 420rd cans and one 1000rd can of M193 and two 420rd cans of M855. So, one is good, both is better.

All my barrels are either 1:7 or 1:8, and I notice the 55gr does better in the 1:8 than the 1:7, but I admit that's purely anecdotal. If you're just paper-punching, 62gr should be fine, unless your range doesn't want you shooting it. It does seem like 62gr is more abundant these days, or at least for a better cost/rd.

Depends on rifle. My DD shoots 62gr much more accurately for example.

My guns prefer 62gr.
My choice load is a Hornady 62gr FMJ over 24.4 gr H335.
1/7 and 1/8 guns here.

Just ordered a pair of Faxon 14.5" 1/8 twist Gunner barrels for a pair of matching builds on some WWSD2020 polymer lowers. I'm pretty convinced that if stoner was around now, with the barrel quality and differing bullet selection available today, that, among other things, 1/8 twist would've likely been the standard.

1/8 shoots 55g FMJ’s just fine. I like the Hornady 55’s but recently have acquired some Wideners 55g’s that the cannelure sits lower than Hornady so I use them with my shorter brass cases (under 1.740). For HD, I don’t fukk around, I use my 300BLK pistol with 155g HPBT....
