I have 200 pieces of .308 brass. I'm supposed to trim when they are 2.015 long. 25 of the 200 are this length or longer. The other 175 are shorter than 2.015. How much does a couple extra thousandths matter?

I would say not much for plinking (as long as it truly is only a couple thousandths) but why not just trim those 25? Even on a hand trimmer it wouldn't take long.
When I do 223 in volume I've gotten to the point where I just run them all through the trimmer. The ones that need it get it, the others don't. I dont have to measure, the trimmer basically does that for me.

I haven't bought a trimmer yet. Maybe I should move this to the reloading section and ask for recommendations.
The 200 pieces is from a single case. Was hoping to do them all at once, once the case needed it.

Moved. My opinion . . . if you're not crimping, it's probably not going to matter too much. Maybe you'll get a little more neck tension in some than others, so that will affect accuracy if you're serious about it. If you're planning to continue reloading rifle ammo and get a trimmer anyhow, then maybe it's the time to do it, so you don't need to worry about it.

Since you are making Accuracy loads, Trim them all to length and then just neck size them after firing. (Assuming they will only be used in the same Bolt Gun). Your brass will last much longer that way too.

Yes making accuracy loads for the bolt rifle. All fire-formed to the chamber with factory ammo, then only neck resizing.
They will lengthen during firing? I measured, and they lengthen about 3/1000 during neck sizing.

Everyone has an opinion, but I would just FL size each time. You'll have fewer issues chambering and few to no sticky bolts. There is a lot of arguing on both sides but I make some damn accurate rounds FL sizing every time with no issues. No matter what you'll eventually have to FL size, probably after 2-3 loads. There are a lot of factors that can increase or decrease that timeframe though Also keep in mind that each piece of brass with act differently, so you can't treat them all the same. This is why only 25 of your lot need to be trimmed. For some reason they stretched a little more. If you're going for accuracy I would trim the entire lot to the same legnth, but thats just me. Re:.223 brass. I trimmed up 2000 pieces 4 years ago to .015 under OAL and they have NEVER grown, 5 uses each later, so I never trim .223 brass once I've trimmed them once.
Anything larger always gets trimmed precisely, and it all grows in length.
I agree with full length resizing.

Sorted through my brass.
Qty 200 - Fed 168gr - Once Fired - 12.5% is too long Qty 200 - Fed 175gr - Once Fired - 100% is too long Qty 377 - Fed Random - Twice Fired - 100% is too long (I probably should have measured before loading it, but it's all worked fine) Qty 174 - PMC 168gr - Twice Fired - 100% is within tolerances
I expected to get at least 1 reload out of the federal brass before it was too long. Surprised that shooting it factory fresh, and then neck sizing it takes it beyond spec.
When I chamfered and deburred all the brass, I could tell the PMC was much harder. Not a surprise it hasn't expanded as much.
Looks like I've shot my rifle about 1487 times.

I fire form and then only neck size and have never had a problem with "sticky bolt". Snozz....if your brass is stretching, check the sizing ball diameter and what lube are you using?

FF and neck works great with one batch of brass and one rifle. Sometimes folks have 4, 5 rifles in same Caliber. FL resizing is a cure for "one size fits all"
