Turkey? Butterfly, brine, slather with butter then into a 550 degree oven for 15 minutes. Reset temp to 350 for required duration (15 minutes per pound).
Baste if you want - I like fruit juices and onions.
Stuffing is a disaster. Dressing made on the stovetop (with sausage) is the way to go
