More duck pastrami. More duck confit. Also, a flan, for the first time. I'll let you know how that turns out, tomorrow.

Recv'd TWO checks for project finished at the BEGINNING of this month. Anyway, I got them... So I bought some groceries - no oatmeal for dinner tonight! Fred Meyer has steelhead on special for $6.99. That's what's for dinner! A little rice, some steamed broccoli and carrots. Life will be good!

What's the flavor profile?

Sure. yup. good idea Some of my favorite sides with salmon or steelhead were cooked spinach or asparagus paired with a rice pilaf or a nice long grain/wild rice mix from Farmhouse, Rice A Roni, or Zatarain's. Good stuff. All of the salmon down here is Atlantic farm raised salmon, no comparison to the line caught PNW variety. Another interesting option, though harder to find, is Arctic Char.

you can get wild rice and toss it into whatever rice you have handy without getting all of the premix flavors. That said, I like the Near East pilafs, uncle ben's wild rice and other your mentioned and always try to have some on hand in the "preps" boxes.
Just that using the individual ingredients you can conjure the flavor you want.

Nioce! I went with the rice you suggested and used this recipe for the Steel head (it is "land locked salmon" so not surprised you thought it tasted like salmon) http://www.olgasflavorfactory.com/recip ... ut-fillet/go easy on the dill (I always do, it's strong stuff)

I really like me some Arctic Char. I like white King as well. White King is my absolute favorite salmon and really miss that about the PNW. Believe it or not we did find a fish market in Austin that sells halibut and salmon flown in from the Northwest. Their fish looks surprisingly good but so far no sign of white king. TW that is a great looking meal. Thanks jukkou for posting the recipe link. That recipe looks awesome. Will have to try your suggestion on mixing wild rice with other mixes. We've tried a couple times making our own wild/long/brown rice mixes from scratch with homemade spices but haven't yet hit on a really good recipe.
