Yup. The Redmond location removed about 1/3 of their meat counter and replaced it with pre-packaged stuff. You can't get chicken breasts individually anymore. Can only get packaged ones.
Last summer they had these amazing chorizo stuffed Hatch chilis in the meat counter. My brother in law asked if they were going to have them again now that Hatch chilis are back in season and they told him that a new corporate directive was to make sure all stores are the same and to disallow fun custom things like that.
It's a real bummer because, like you, I mainly go for the meat counter.

Lowes went thru the same thing 10+ years ago. Used to be that Lowes had an awesome fastener section Left side as you walk in door were rows and rows of fasteners, even furniture items like latches, bumpers, etc. Was super handy when working on projects and you did not know exactly what you needed, that got me in the door then I would buy other tings I needed there. Then they adopted this one store fits all and it was gone. replaced with a small section of prepackaged crap. Pretty much not shopped there since.
