I must be dumb, because I’ve been trying to figure out what this exactly means, on and off for the last couple hours.
Picture biting through a steak across the grain, then the difference of having the meat's grain lined up with your front teeth.
There's a big difference in chewability.
I've never heard of doing this for ground meat.

Might be easier to picture when talking about splitting wood. Split with the grain, no problem. Turn the chunk of wood sideways and take whack or put 30 tons on a wedge.... Not so easy.
